Mr. Vicente Quimbo, Chief Executive Officer and Founder of Novellino Wines, had the visionary idea to create a wine brand for Filipinos when he introduced the brand in 1999. Nonoy, as he is well-known in the business community, has worked hard to establish his company as the only local winery with complete control over wine production, from grape sourcing to blending, winemaking, bottling, labeling, and distribution.




On October 17, 2024, Novellino launched its new product line in honor of the company's 25th anniversary, with local media, influencers, partners, and guests in attendance.





The event includes a tour of the winery's cutting-edge facility in Laguna, providing local media with exclusive access to the latest technology and equipment.




TOAST TO SERVICE: The man behind the brand takes pride in the company's strict systemization, which ensures the high quality of Novellino Wines. He adds that the process of making sweet wine is both difficult and expensive. The process is time-consuming and labor-intensive, but it is worthwhile.






The company improves its winery by investing in new, cutting-edge equipment and infrastructure to boost production and capacity. All of the upgrades, combined with revolutionary wastewater disposal solutions and renewable energy, have contributed to the Philippines' growing cultural movement of winemaking, drinking, and appreciation.


Novellino's step-by-step winemaking process, from fermentation to bottling, demonstrates Pinoy's world-class craftsmanship.

The first step is fermentation, which begins when yeast converts grape juice sugars into alcohol and carbon dioxide. The entire process converts more sugars into alcohol, resulting in Novellino's signature "dry" wine.


Second, centrifugation is a process that removes yeasts and lees, preventing future fermentation. The advanced equipment used is the cutting-edge Alfa Laval centrifuge from Sweden. It is Asia's first and one of the few wineries with this modern equipment.





The third step is to clarify, filter, and adjust the wine to meet standards and specifications. The winery boasts a three-stage microfiltration process that removes debris as small as.45 microns, resulting in pure liquid wine.



Fourth, chilling is the process of cooling wine to between 0 and -2 degrees Celsius. This allows for the reintroduction of CO2, a byproduct of fermentation, which makes wine effervescent and refreshing.

The final step is the bottling of wine. Bottles are cleaned and rinsed with reverse osmosis purified water before being filled with fresh wine. Each bottle is capped, corked, dry sealed, and packaged in boxes for distribution.
